It's not so much that he should not have something to eat in the middle of the day because, as you said, he is a baby and needs to eat more often. It's that you need to put out a couple of different soft foods (and adding hot water to seeds and dehydrated fruit that has been treated -most likely- with sulfates doesn't qualify as 'soft food') fresh but only twice a day and add 'soft' seeds for dinner.
Babies are not bored by just sitting on your shoulder, it's what they want and need to do because what they want the most is the comfort, security and warmth of a parent presence.
