severe macaw TRAINING HELP

hi i have a 5 year old severe macaw called skye i rescued him through my job he was semi tame when i got him. He will take food from my hands,he sits next to me on the sofa and im just starting the step up training with him with a perch as he hates hands at the moment the problem i am having with skye is that he is starting to chew the perch im training him with should i let him do this ?

also when he is out his cage all his attention is on me most of the time and when were training and im talking to he he does this head bobbing thing up down up and down and some times lunges at you i have read this is saying he is having fun but the times he lunges at must mean he isnt am i right ???

The Java kind are hard to destroy so it dissuades chewing and hopefully returns more focus to training.
