Well, for one thing, parrots don't compete with monkeys and, for another, unless your bird is a wild-caught that was taken out of the jungle as a juvenile (in which case the chances that you would be able to touch the bird are slim -well, unless it's very old or very sick), he would have no cause to react to monkey-like movements. I've only had two macaws (I don't usually take them in as I've never had a birdroom 35 ft long), both were aggressive due to neglect (they were rehabilitated before they were rehomed) but I never noticed what you describe in them and I don't remember owners of macaws commenting on this on birdsites, either, so I would think it's just a quirk your bird has.
