I see that no-one responded to your questions yet. I own 2 GCCs and realize that mitreds are a bit larger and may have different requirements, but here's my responses to your questions:

1. Best cage size would be what the cage manufacturers define as amazon or African Grey size. Although conures are small, they are very active and would appreciate as much space as possible.

2. My GCCs LOVE to bathe. I would assume that most conures love to bathe based on the information that I've read about conures in general. Mine love to soak in their water dish and I give them a larger tub for their fun in their cage.

Enjoy your new bird! I love my conures and hope that yours can bring you the joy that mine have brought to me.

For pellets, I feed mine Kaytee Rainbow. They really like this. I've tried other brands and they didn't like them. They also love Nutri-Berries by Lefeber (parrot size) mixed with Oven Fresh Bites (cockatiel crumbles). One of my birds loves fresh chopped fruits, especially apples and pears and the other is crazy about dried fruit (mango, pineapple, raisins, figs). I also give them a pinch of mixed seeds once a day. They both are crazy about millet and love treats.

If the bird is currently on a pellet diet, I'd keep him on the same pellets. You can introduce him to different types of pellets gradually by mixing the new with the current diet for awhile.

Please get a lot of climbing toys. Conures are fabulous acrobats and mine climb, swing, ring their bells and have a great time with their toys. Also get some foraging toys so they can search for their treats.

I think a pelleted diet is best for most people although not as ideal as a fresh diet but few people have enough knowledge to feed a totally fresh diet.
Try to steer clear of ones with alot or artificial colours and other additives. I think the better brands are Harrisons, roudybush and tops but any pellet is better than none at all. You can always start off with one that isn't as good and gradually switch over to another brand without the extra rubbish in them if you find yourself struggling to convert your new parrot over but tbh I don't think you'll have a problem.
Harlie my 'tiel is the fussiest eater I have ever met, she would prefer to starve than try new things so I was really really worried about trying to get her on pellets but it turns out I didn't have too much trouble at all switching her onto pellets although try as I might I can still not get her to eat anything other than pellets and seed :(
