I managed to teach Cookie how to wave! What should we work on now?

Some good starter tricks would be the nod, shake head no, and turn around.
Michael posted a brief description about teaching the nod and shake here.
The 'wings' or 'stick 'em up' trick where you cue the bird and it extends its wings fully is cute too, but it might be easier to train once you've taught a few more behaviors.
