I've had five females and one single male. I did not have the male for very long, only 9 months, as I was doing his owners a favor and boarding him (as well as his sister) for free while they got their lives in order so I can't really give you much information. And this is not only because I only had him 9 months but also because, when you have only one bird to go by, you learn about that particular bird much more than you do about the species or gender-specific behaviors. But, going by him and comparing him to the females, I would say that he was more aloof than the hens. He had as large a vocabulary as his sister but, while his sister was very empathetic and sweet (this bird would fly to my shoulder and kissing my cheek ask me in the sweetest imaginable voice: "You OK, sweetheart? You OK?" when I got bit by another bird), he seemed to be almost morose at times. There was no aggression, I never got bit by him or anything. He would take treats from my hand, step up when asked, etc but there was no flying to my shoulder, kisses given on his own initiative or requests for step up. He was also more into making nests than the hens were - he was always trying to get under or into things while the hens were more into scratching corners.
As the gray hens go, I've never had a single one that was not just plain sweet-tempered.
