Well, you can always hard-boil the egg or freeze it overnight. I don't recommend addling eggs any longer because that's what I used to do and I ended up with a baby cockatiel once proving that it doesn't always work.
But, my dear, please review your birds light schedule and diet because we are in molt season right now and they don't produce sexual hormones during it so something is not quite as it should be with her endocrine system. Sometimes, when they've been living under inadequate conditions for a long time and suddenly go to a home where everything is good and they start feeling stronger, get better nutrition, feel more comfortable, flight time, etc. they kind of try to 'cram' a season where it shouldn't be (sometimes they lay, sometimes they go into molt) as if their bodies were trying to make up for lost time but you've had her for two years now so this cannot be the case leaving only the 'normal' triggers for it (light and diet).
Also, I hope you are eating organic mashed potatoes with no salt, no milk, no butter, no nothing, because, otherwise, regardless of how little you give them, it's really not good for them at all.
