I don't know about parrots in the wild during moonlight but chickens stay on their perches but cackle a lot during the night.

I realize that Rainbow is unusual but she looks for food in pitch darkness. She gets hungry during the night and searches for food. I have to leave her seed and a few grapes out until early morning when she is sleeping.

There is no effect. At least, not to their endocrine system because the moon does not have any light of its own, it just reflects it and, as it travels and hits the atmosphere, it loses 'potency' [that's why moonlight is always so dim] so the spectrum is completely different to actual sunlight [one of the differences is that it has VERY little UV light]. What does have an effect [and there are lots of studies about this] is artificial light at night - it has been found that even birds that are far from cities but near enough for them to still perceive it have their endocrine system affected by it.
