I would NEVER do this. This is a CRUEL idea for any animal!
It sounds like "wife swap" where wives switch houses, husbands, and kids. But at least with that show, there is one parent present for the kids to keep some normalcy and continuity of care for an innocent being.
What you are suggesting is switching pets with (I assume) no or little instructions. Because who would want to watch "The Pet Sitting Show." Even with lots of instructions, I would not allow my pet in someone's home I didn't know or allow someone around my pet or my home I have not met first. Switch with a friend? Most of my friends with animals have cats or dogs that know me. My friends know my bird. Boring.
Plus, most animals don't act out in a new environment or around new people the first week. Not until they are comfortable. I don't see you having much of a "show" because of this. Maybe with a dog or cat, but be prepared for a perch potato parrot. Lots of parrots are scared of cameras too. Have a great time filming a screaming or cowering parrot. No amount of cutting will make that look funny or less then abusive.
Reality shows like this have not done so well lately anyway, have you noticed? People don't buy "the set up" anymore and most of these shows have been kicked to the higher cable channels for the enjoyment of the perpetually unemployed, still live at home, 30-somethings with no future plans. In other words, no money. Oh! But I'm sure you can find advertising from check cashing places, disability lawyers, and bail bondsman.
Reality shows that show people/pets in their own environments do better. Like American Pickers, Deadliest Catch, and the animal shows where they help owners with their pets behavior. At least these are educational. But even shows like Duck Dynasty and Honey Booboo are doing better then any "set up" shows. How sad is that?
Not to mention...hasn't your show been done before? I seem to remember something...
