Paquita is the diminutive form of Paca which is a nickname for the name Francisca, same as they use Paco for men called Francisco. It comes from when St Francis of Assisi founded the Franciscan order and was called PAter COmunitatis (Father of the Community).

No, it's just the feminine version of the masculine nickname but even the men's name has lost its original meaning of Pater Comunitatis and is now just a nickname for whoever is called Francisco (Pancho is another nickname for them, too). St. Francis was called that because all 'superiors' in Catholic religious orders are called Father or Mother even when the others are called brothers or sisters.
