So if the bird light is on a schedule of 10am to 6pm I will have to
change to 9am to 5pm. Right?

I think that is right as you set your clock ahead 1 hour in the spring and 1 hour back in the fall. So if you don't change the clock 9am would read 10am.

Well, that's one of the advantages of keeping them on a solar schedule, you don't have to worry about what time it is 
If the sky is beginning to show some light at the horizon, it's time to get up and uncover the cages (the dogs let me know) and, if the sun is halfway down, it's time to turn off the artificial lights... it doesn't really matter at what time this happens.
