Start with more variety. My Meyer's parrot will only go for apples as a last resort, but likes grapes, berries, oranges, and just about any other fresh fruits. She prefers her carrots grated and her yams cooked-so try a different form of serving.
Babies parrots learn what to eat from their parents. That's you, now. Eat some fruits or veggies in front of your bird. Make a big show of how delicious you find it. Then offer some to the bird. It needs to be a separate cut piece, to avoid giving your bird something nasty from saliva. They can eat most fruits and veggies people can, with exceptions like avocado, some kinds of lettuce, and uncooked beans. The internet has lists you can find by searching on "parrot-safe foods".
Not eating could be a sign of something wrong, but your bird is probably just adjusting to a new home. All new birds should be checked by an avian vet, though. Have you got one?
