It isn't being unfriendly, it is scared, and it is an aviary bird, not a companion bird. This is not it's fault, it is just doing the best that it can with its given circumstances. An aviary bird is not meant to be handled a lot, it is meant to be in a large cage, so that it can fly about and look pretty and be admired from a distance, not handled like a GCC.
Since you were looking for a bird that would fill the role of being a companion for both you and Ozzie, you just didn't do enough research, or didn't understand the term aviary bird and what it meant. While it is easy for many companion parrots to fulfill the role of both an aviary bird and companion bird, it is much more difficult for the aviary bird to fill both roles. They are simply too nervous and high strung for it.
Given enough time and patient, respectful interaction this bird will adjust and accept one or two people handling it on a limited basis, mostly while taking care of its needs. It is even possible that it will eventually accept you and even enjoy limited excursions out and about in your home while perching on your shoulder, but to expect any more than that would be pushing it too far. It may not even reach that level of comfort with you as it is very stressful for them. I would get it a companion of the same species and enjoy them as an aviary bird, with its limited interaction.
This is one of the reasons that many of us keep saying that while the breeder may be nice, and may be knowledgeable, but they have a product that they need to sell and many of them will go for the sale instead of making sure that you know what you are about to purchase.

It looks like a Superb female and, if it is, she'll never get the bright colors, she will look like this for the rest of her life (her plumage doesn't look to be in very good shape, either).

Wolf is correct, the poor bird is not been unfriendly, it's, most likely, scared out of her wits. Like we said, these are aviary birds, not good companion material, my dear.

Is there is a specific website someone could recommend so that I could have a little read up please? Also I am now kind of thinking that Ollie is now a female judging by the photographs I have seen. The males seems to be very colourful whereabout as Ollie is not as can be seen by the photograph attached.
