Yes, indeed, and fasting is real hard on the liver and kidneys so take your time. Slowly but surely is the way to go with parrots. But, if you see he is not eating enough of the good new food (always check the poop for quantity) you can always supplement with a good quality whole grain bread (my birds ADORE Arnold's Nutty Almond or HealthNut bread and you can get them in the supermarket), it's filling, not completely devoid of nutrition AND it's low protein and fat! BUT give him the good food first and only give him the bread after a couple of hours of him not eating it.
