I know that you can get white beans in the canned foods section of most grocery stores they might be called navy beans. I don't know if you can get lentils in the same section or not, where I live, lentils are in dry goods. If you find either of them in canned foods, when you open them rinse them well to remove any salt that is in them. Dry lentils can be cooked with wild or brown rice for the bird.
While it is good that the cat is some what afraid of the bird, you still need to know that a scratch or saliva from a cat can kill a healthy bird. Not always, but it can. The main reason that you need to know this is that a lot of cockatoos like to wander around on the floor and they claim the whole place as theirs, so if it finds the cat it may attack or just pester it.

Toos need more protein and a bit more fat than other parrot species so he can NOT get just fruit and veggies in any meal, there has to be some protein in all of them (mine gets cooked whole grains in the morning and a tree nut or two and a good quality seed mix with another nut or two for dinner). His bowl has to have food all the time. Dry fruits are not good for them (usually treated with sugar and/or sulfites), they need fresh fruit daily. Also, they LOVE leafy greens and they usually go for them first even before the grains so he needs a different kind every day of the week.

Im sorry for the delayed reply had internet problems for the past few days.
With charlie our cat he is now able to sit around rio and rio doesn't hiss at him anymore, i can see that charlie is curious at time but if he sees rio approaching him he would then back off
but i definitely keep my eye out for any aggression between them and to make sure they both have their own space. I didnt know about the saliva issue whis is pretty scary but i think they are both alright with each other.
I ended up writing down a food plan for the week lol i know that sounds dorky but thought I'd mix it up for him instead of the same boring meals.
Only thing im unsure about is how much he's eating of it, i can see bites in the foods but then ends up dropping it or throwing it to the bottom tray under his cage and i end up picking it up again and putting it back in his bowl. I tried putting bigger pieces so it wont fall through

The wider a variety of fruits and veggies that you bird gets an a daily basis the better for his nutritional needs, you can also change the texture simply by using bigger and smaller pieces as well as cutting foods into strips and shredded works great for some foods as well, but the whole grains, vegetables, legumes and so on do need to be fed to him daily, or his diet will not be balanced enough to provide for him adequately.
