Poop does change. The morning one is usually huge and, in some species (like amazons, for example) so liquidy that one might think the bird has diarrhea. My senegals, for example, do a the morning bomb and then do sometimes a little one almost dry and a bit later one that is mostly urine. It also changes depending on the diet. Birds on seed poop dark green feces but birds on pellets poop brown. Fresh fruit and veggies would produce wetter poop than pellets or seeds. The trick to monitoring without unnecessary panic is to wait and check during the entire day so, if the bird is consistently pooping feces without shape, you know he has diarrhea, if the 'wet' stain around it is always large, he is peeing too much, if it's always too dry, he could be dehydrated, etc. etc.
