Do Alexandrine Parrots eat bitter melon / bitter gourd / karela and french beans? Is this safe for them?

By french beans do you mean string beans or green beans or long beans? If so, yes, they can be offered either cooked or raw in moderation. Some beans should not be eaten raw or as raw sprouts by humans or birds, with red kidney beans being the common example.

I'm not sure about bitter melon. It's not something I'd eat raw, so I wouldn't offer it raw. Since it can be eaten by humans cooked, it is likely it is safe, but I would personally not offer it since I'd have to go out of my way to, and I doubt it's been studied in birds much. Apparently the foliage and bark is toxic.
