I recently got a pair of conures who were raised on seeds. They now eat pellets, only after 1 month. The best way I think you can do it is of course the weening method; mix seeds with 25% pellets and gradually increase until it's almost 100% pellets. But a better way is to feed fresh food daily and mix with some pellets.
For example, Mix scrambled eggs, cooked corn, peas, carrots, and beans with some pellets
OR sweet potato, a few crushed almonds and spinach with some pellets.
You can also try whole grain rice or pasta with red pepper and tomato
then the fruit and veggies with some seeds and pellets for a meal later on in the day.
I usually cook up a few meals for them, put it in zip locks and defrost for convenience.
