I'm honestly not sure. I was told the former owner had paperwork for him, but I haven't been able to get my hands on it.

Well, this is something that you need to know so I would recommend your getting him/her DNA'd - especially since he/she is overly hormonal...

I'm sorry for being naive here, but why do I need to know? Aren't the 'rules' for hormonal birds the same regardless of sex? No petting inappropriately, daylight hours and feeding?

Yes, that is the same but hens need more calcium and you need to be vigilant with them about laying and eggbinding and not with males. The other issue is prolapse which happens to both genders but much, MUCH more often to females than males [it mostly happens to males that have been potty trained].
